Italian Hard Cheese

Italian Hard Cheese is similar to Parmigiano Reggiano but is not DOP certified. It is a dry cheese made from skimmed or partially skimmed cow's milk and has a hard pale-golden rind and a straw-colored interior with a rich, sharp flavor.
